Pete’s Favourite Scrambled Egg Breakfast for One


Ingredients:
2 Chickens eggs
1 Duck egg
1 Dessert spoon of butter or margarine
1 Salt to taste
1 Tablespoon of grated cheese – Parmesan, Chedder, etc
1 Teaspoon of freshly chopped Chives


Method:
Scramble eggs in a bowl with a fork and then stir in cheese, chives, (salt)

Place butter in a hot frying pan and then pour in the eggs, move the eggs around until cooked and then remove from pan.

Serve with buttered sour dough toast and fresh ground black pepper to taste.
